Their farm to table initiative is functional in 5 of their lodges- Kanha Earth Lodge, Pench Tree Lodge, Denwa Backwater Escape (Satpura), Kings Lodge (Bandhavgarh) and Tree House Hideaway (Bandhavgarh). These are well equipped with an in house organic farm and also serve a menu built around local, seasonal produce.

As Harpreet Singh, Lodge Manager at Kanha Earth Lodge says, "The food served is fresh, it looks good and tastes good too. Our menu is basically driven by what is in season. Seasonal ingredients and a balanced menu is our prime focus."

The kitchen garden at the lodge is home to quite a few herbs and vegetables including Amaranth leaves, Cauliflower, carrot, peas, etc.

 

 "Vegetable Jalfrezi is a huge hit among our guests. This dish is a blend of many vegetables all picked from our very own farm. Even the spices that we use in the meals are prepared at the lodge itself. It's a strict no-no to any kind of ready-made spices. Sil Batta (Grinding Stone) Chutney is also extremely popular among our guests. Since it is prepared in the most traditional way its authentic taste is maintained and hence our guests enjoy every bit of it.' added Mukherjee.
